ali, amal, and mohammed came over after work today. we agreed that two recipes i’d been itching to try for a while would make a fantastic break fast this evening. a trip to whole foods and 30 minutes of chopping later, we just had to wait for sham to get home from work.

ok so here is how i make our thai pizza. i will also link to a more polished recipe at the end.

first of all, i typically cheat and buy a crust. this is the step i want to work on! would love any crust recipe suggestions.

preheat oven to 475 degrees.

then you start with the crust in your pizza pan. then i take two (okayokay, THREE AND A HALF) healthy spoons of peanut butter and spread it all over the crust. spread spread spread! then i dash some soy sauce on it. probably about four dashes. and i twirl honey over it. THEN I MIX IT ALL TOGETHER. this part is a blast. know it.

i chop up about five spring onions because i lover them. sprinkle that and carrots (match-stick cut) over the pizza. if we have it, like we do today because of pad thai leftovers, i cut up some cabbage and red peppers. spinach is what i’d normally use, but we’re out somehow. if you use spinach, pile it on because as you know if you’ve ever cooked it ever, it’ll cook down.

now, if i had my way, i’d fry some tofu in evoo and cover the pizza in that, but sham was worried he was eating too much soy so we’ve been cutting it out from his foods when we can. tonight i cut up the fancy (read: free-range, antibiotic-free, local) chicken i bought and cooked earlier in the week, threw it in a tuperware container, and tossed it with some peanut stirfry sauce from trader joe’s. then i put that on the pizza.

and finally? chopchop up the cilantro i had left from pad thai last week.

note to self: START YOUR DAMN HERB GARDEN ALREADY, WOMAN. you could smell fresh cilantro daily! do it.

oven preheated, put it in, cook for ten minutes, voila!
